Chicken, black bean and feta with lime and coriander salsa

I strongly believe that it’s possible for anyone to cook fresh, tasty and speedy food. You don’t need any special skills, a lot of time or expensive ingredients. You need some practice and inspiration. I’ve had plenty of practice and I’m always looking for inspiration!

This dish took 15 minutes to prepare and 45 mins to cook. And it disappeared even quicker! And only one roasting tin was used (the less washing up the better!).

I made it for lunch the other day and my friend’s daughter was round and ate with us. My friend texted me shortly afterwards and said: ‘L. said that she had the most amazing lunch ever. Could I possibly have the recipe. It’s great her coming over to you and eating as she was such a fussy eater before and now she’s eating feta cheese and butternut squash wow! X’ isn’t it wonderful to get feedback like this???

Chicken, sweet potato and chorizo with black bean, feta and lime salsa.

You’ll need:

1 red onion, quartered

3 cloves of garlic, crushed but left unpeeled

2 medium sweet potatoes, diced (you can substitute it with butternut squash)

8 boneless and skinless chicken thighs

150g chorizo

1 teaspoon sea salt

2 teaspoons ground cumin

2 tablespoons olive oil

A bunch of fresh coriander, chopped

For the salsa:

1 x 400g tin of black beans, drained and rinsed

2 tablespoons extra virgin olive oil

100g feta cheese, crumbled

Juice of 2 limes

I served this dish with some baby roast potatoes and broccoli. Cooked in the oven at the same time as the chicken.

Instructions :

Preheat the oven to 180°C fan/200°C.

Mix the onion, garlic, corn, sweet potato, chicken and chorizo into a roasting tin then add sea salt, ground cumin and olive oil and mix them with the chicken and chorizo.

Roast for 45 minutes, until the chicken is golden brown and cooked through.

While the chicken is cooking, mix the black beans, olive oil, feta and lime juice in a bowl and set aside.

Once the chicken is ready, scatter over the black bean salsa and coriander, and serve.

Serves: 4

Prep: 15 minutes

Cook: 45 minutes

Veggie? No problem, just skip the chicken and chorizo and add more sweet potato or add some cauliflower florets. I hope that you get some inspiration from this recipe and make it your own.
